This celebratory Imperial Stout pours an impenetrable jet black, releasing an opulent bouquet of decadent dark chocolate and rich, salted caramel. The influence of Cognac barrel aging is profound, weaving notes of dried apricots and aged brandy through the dense malt profile. Velvety and viscous on the palate, it delivers a complex interplay of bittersweet cocoa and savory-sweet toffee, supported by a sturdy foundation of roasted coffee. A gentle, spirit-forward warmth from the twelve percent alcohol persists into the finish, harmonizing with the salted caramel to create a lingering, dessert-like indulgence that remains balanced and sophisticated.

Appearance. Jet black and opaque (SRM 40+). Pours with a dense, persistent deep tan head that leaves thick lacing. High viscosity is apparent through visible legs on the glass.

Aroma. High intensity. Dominant notes of bittersweet chocolate and sea-salted caramel. The Cognac barrels contribute vinous, oaky, and dried fruit aromas like raisins and plums. Subtle roasted malt scents of espresso and charred grain provide a robust backdrop, with minimal hop presence.

Taste. Initial impression is thick and sweet, immediately followed by layers of dark chocolate and savory caramel. The Cognac aging adds a sophisticated layer of grape-like esters and toasted oak. A firm roasted bitterness balances the sweetness, leading to a long finish of cocoa and warm spirit. Complex and harmonious despite the high gravity.

Mouthfeel. Full-bodied and exceptionally chewy with a luscious, velvety texture. Carbonation is low to moderate, enhancing the creaminess. A significant but smooth alcohol warmth is present, reflecting its strength without being harsh.
