Munich Dunkel 5 º
Witching Hour is a collaborative Munich Dunkel that showcases a sophisticated malt architecture. A foundation of Munich malt establishes a robust toasted bread and caramel base, while the strategic addition of Carared and Chocolate malt introduces deep garnet hues and a distinctive chestnut complexity. The inclusion of candi sugar provides a nuanced, layered sweetness that never becomes cloying. Hallertauer Mittelfruh hops contribute a restrained herbal spiciness and delicate floral notes, balancing the rich malt profile. The result is a smooth, medium-bodied dark lager that honors traditional Bavarian roots while offering the depth expected from a modern craft collaboration.
Appearance. Deep brown with prominent garnet and ruby highlights (SRM 22–26). Topped by a creamy, long-lasting tan head with fine lacing. Brilliant clarity.
Aroma. Moderate-high malt intensity featuring toasted bread crusts, nutty chestnuts, and light caramel. Subtle hints of milk chocolate and dark sugar are present. Low herbal and floral hop aroma from the Hallertauer Mittelfruh. Exceptionally clean fermentation profile.
Taste. Rich and malty initial impression with flavors of toasted grain and soft toffee. The mid-palate introduces chestnut and subtle cocoa notes without any harsh roast or burnt bitterness. Medium-low bitterness provides a gentle balance to the malt sweetness. Finish is medium-dry and clean, leaving a lingering bready aftertaste.
Mouthfeel. Medium-full body with a soft, dextrinous, and smooth texture on the palate. Moderate carbonation. No alcohol warmth or astringency, making it highly drinkable.

Back in July, we had the pleasure of hosting Alice and Michael from @thornbridge over to brew with us. It goes without saying that Thornbridge have had a huge influence on Black Iris, from drinking Jaipur growing up in Sheffield to watching them redefine the UK beer landscape over their currently 20 years in production. So it would be a little bit of an understatement to say we were pretty excited to have them over!! And here is what we’ve brewed up: Witching Hour 5.0% Dunkel 🧙♀️⏳🖤
