Birra del Borgo Rubus presents a vibrant sensory evolution of the Duchessa base through the addition of fresh Rubus Idaeus. The addition of one hundred grams per liter of raspberries triggers a wild fermentation, imparting a distinctive character defined by sharp, clean lactic acidity and deep red fruit complexity. Aromas of freshly picked raspberries and tart currants dominate the nose, layered over a subtle, grainy malt foundation. On the palate, an assertive but balanced tartness cuts through, showcasing the pure essence of the fruit without cloying sweetness. This Straight Sour Beer finishes exceptionally dry and effervescent, leaving a lingering, refreshing berry tang.

Appearance. Deep pink to light ruby hue with a slight haze; features a large, frothy pinkish-white head with moderate retention and lively effervescence.

Aroma. High intensity; dominant fresh raspberry and red currant notes are supported by a sharp, clean lactic sourness and a background of crackery, bready malt. No hop aroma is present.

Taste. A leading punch of clean lactic acidity and tart raspberry flavor; minimal grain-forward malt presence provides a lean structure. Hop bitterness is undetectable, resulting in a balance heavily tilted toward sour fruit. Finishes bone-dry and crisp with a lingering berry zest.

Mouthfeel. Light to medium-light body with high carbonation that prickles the tongue; refreshing and crisp with no significant alcohol warmth.
