This spontaneous wild beer presents a sophisticated sensory profile, defined by its two-year maturation and the vibrant addition of fresh Ontario cherries. The aroma leads with a complex interplay of bright red fruit, marzipan-like cherry pits, and a nuanced barnyard funk reminiscent of wet hay and leather. On the palate, the fruit intensity is balanced by a profound dryness and a light, earthy smokiness characteristic of mature Brettanomyces. The spontaneous inoculation provides a multi-layered depth, finishing exceptionally clean with a lingering tartness. It captures the essence of a traditional lambic-style ale while maintaining the crisp, attenuated structure of a refined Brett Beer.
Appearance. Striking deep ruby with a slight hazy luminescence from the fruit addition; supports a fine-beaded, pinkish-white head with moderate retention and delicate lacing.
Aroma. High intensity; dominant notes of fresh Ontario cherries and floral esters are layered over a complex backdrop of horse blanket, hay, and an earthy, aged funk. Subtle oak and leather notes emerge as the beer warms.
