This Gueuze presents a refined and accessible entry into the world of wild Belgian ales. Brewed with raw wheat and aged lambic, it pours a brilliant golden hue with a persistent, mousse-like head. The nose is a delicate balance of citrus zest, aged hay, and subtle earthy funk, underpinned by a faint bready sweetness. On the palate, a crisp lactic acidity provides a refreshing sharpness, harmonized by light fruity esters and a touch of oak. The effervescent carbonation and bone-dry finish accentuate its zesty character, making for a sophisticated, highly drinkable expression of the spontaneous fermentation tradition.
Appearance. Golden color (5-6 SRM) with brilliant clarity. Features a thick, rocky, mousse-like white head with excellent retention and fine effervescent carbonation.
Aroma. Moderate intensity featuring a clean lactic sourness. Complex but approachable funk presents as notes of hay, wet straw, and light leather. A clear citrus fruitiness, reminiscent of lemon peel and rhubarb, is supported by a grainy, bready wheat character and a hint of honeyed malt. No hop aroma.
Taste. Refreshingly sour and funky. Initial impressions of tart lemon and green apple transition into a rustic barnyard complexity. Low bready malt flavor provides a brief counterpoint before a firm acidity takes over. Bitterness is negligible, with the sourness providing the primary balance. The finish is crisp, dry, and lingering with a tart, funky aftertaste.
Mouthfeel. Medium-light body with a prickly, high carbonation. Notable tartness provides a pleasant puckering sensation without harsh astringency. Smooth and lively on the tongue with a very light alcohol presence.
