This American IPA from Belhaven marries traditional Scottish brewing with a modern hop profile. Utilizing a base of 100% Scottish Pale and Crystal malts, it presents a robust malt foundation that supports the prominent hop additions. The use of Challenger, Cascade, and Hersbrucker hops creates a complex sensory experience. Late additions of Cascade and Hersbrucker deliver a distinctive nose of grapefruit zest and gooseberry. On the palate, the beer transitions from a juicy, citrus-forward start to a refreshingly bitter bite. It is a sparkling, copper-colored ale that balances classic malt sweetness with a vibrant, resinous finish typical of the style.

Appearance. Sparkling clarity with a deep copper to gold color (approximately 10-12 SRM). Pours with a medium-sized, off-white head showing good persistence and light lacing.

Aroma. Moderate to high hop intensity featuring bright grapefruit zest and a hint of floral gooseberry from late-addition Cascade and Hersbrucker. A supportive background of bready Scottish Pale malt and subtle caramel sweetness from Crystal malt is present. Clean fermentation profile.

Taste. Initial impression of juicy citrus and grapefruit hops. Bitterness is firm and medium-high but balanced by a sturdy malt backbone. Notes of toasted grain and light caramel from the Scottish barley malt provide depth. Hop flavors of spice and citrus lead to a medium-dry finish with a refreshingly bitter, lingering aftertaste.

Mouthfeel. Medium body with a smooth, satisfying texture. Moderate to high carbonation provides a sparkling quality. No harshness or astringency is present, with only a very light, well-integrated alcohol warmth.
