Beak Drifts is a commanding Imperial Stout that evokes the atmospheric warmth of a pub hearth on a cold night. Pouring jet black with a viscous persistence, it releases an intense aroma of charred white oak, cured tobacco, and a hint of roasted soot. The 11% ABV provides a sophisticated bourbon-like warmth that carries complex layers of bittersweet cocoa nibs and aromatic vanilla. The palate is indulgently rich, mirroring the caramelized, eggy sweetness of Portuguese custard tarts against a backdrop of deep roasted malts. It is a velvety, full-bodied experience that masterfully balances decadent pastry-like notes with a firm, drying oak finish.
Appearance. Jet black and completely opaque (SRM 40+). Pours with a thick, creamy, deep tan head that shows moderate retention. High viscosity is evident as the beer leaves prominent legs on the glass.
Aroma. High intensity. A rich, complex blend of dark chocolate and heavy roast is complemented by evocative scents of charred white oak and aromatic pipe tobacco. Prominent bourbon-like alcohol notes and sweet vanilla provide a luxurious top note, while subtle hints of dark fruit and wood smoke linger in the background.
Taste. The initial impression is intensely rich, featuring the caramelized sweetness of vanilla beans and custard tarts. This is quickly balanced by layers of bittersweet cocoa nibs, heavy roast, and a firm hop bitterness that provides structure. The mid-palate reveals charred wood and spirit-soaked oak character. It finishes with a long, lingering warmth and a harmonious blend of roasted grain and dark chocolate aftertaste.
Mouthfeel. Full-bodied and exceptionally chewy with a luscious, velvety texture. Carbonation is low to moderate, enhancing the beer's weight and creamy mouth-coating quality. A significant, smooth alcohol warmth is present and well-integrated.
