This vibrant Wild Specialty Beer showcases a masterclass in blending and maturation. A base of heritage grain provides a rustic foundation for over a year of aging in Chianti oak foudres. The subsequent eight-month conditioning on fresh raspberries, combined with a yuzu-infused barrel-aged saison blend, creates an intricate sensory tapestry. Expect an intense bouquet of red fruit and bright citrus, where the raspberries evoke deep black cherry and the yuzu contributes sharp lemon zest. Subtle almond notes and a vinous pinot noir character emerge from the extended oak contact. It is spritzy, elegantly tart, and finishes with a refined, dry wood-tannin structure.
Appearance. Deep ruby to reddish-pink (SRM 15-22) with a natural haze from the fruit and wild fermentation. Pours with a moderate pink-tinted head that exhibits moderate to low retention, common in acidic styles.
Aroma. High intensity. Dominant fresh raspberry and lemon zest aromas are backed by a complex wild character featuring earthy funk and hay. Subtle nutty almond notes and a distinct vinous, red-wine quality from the Chianti foudre are present.
Taste. Initial sharp raspberry tartness and bright yuzu citrus flavors. The mid-palate reveals layers of black cherry and oak-driven woodiness. Bitterness is low, allowing the clean lactic acidity to provide balance. The finish is bone-dry and lingering, with a delicate pinot noir grape-skin tannin and refined oak character.
Mouthfeel. Light to medium-light body with high, spritzy carbonation. There is a noticeable but pleasant wood-derived astringency and a subtle warming sensation. The texture is crisp and highly effervescent.

Il s’agit d’un assemblage de deux bières :
– L’une élevée en foudre de Chianti pendant plus d’un an avec ajout de framboise.
– L’autre étant une Saison barriquée de deux ans avec ajout de yuzu cultivé en Angleterre.
