Basqueland Pie Eating Contest

This decadent Imperial Stout presents an opulent sensory experience driven by a complex foundation of 9 selected malts and roasted corn flakes. The extended boil creates a viscous, ink-like base where rich dark chocolate and espresso notes provide a canvas for the pastry-inspired additions. Aromas of toasted coconut and the almond-vanilla spice of Tonka bean meld with lactose to create a velvety custard-like profile. Prominent cinnamon notes weave through the layers, providing a spicy counterpoint to the deep malt sweetness. This is a high-gravity powerhouse that balances intense roasted grain depth with the lush, dessert-like textures of a modern pastry-focused brew.
Appearance. Color is jet black and completely opaque (40+ SRM). It pours with a thick, dense, dark tan head with moderate retention. High viscosity is evident as the liquid clings to the glass, forming thick legs.
Aroma. High intensity with a rich blend of dark chocolate, cocoa, and heavy roasted malt. Strong spicy notes of cinnamon and the characteristic vanilla, cherry, and almond-like character of Tonka are at the forefront. Distinct sweet coconut and creamy lactose provide a dessert-like bouquet, masking any hop aroma.
Taste. Initial impression is intensely sweet and malty, featuring flavors of rich dark chocolate and toasted grain. The mid-palate introduces a symphony of velvety custard and creamy lactose, accented by the woody warmth of cinnamon and toasted coconut. Bitterness is low to moderate, primarily serving to provide balance against the massive residual sugar rather than standing alone. The finish is long and lingering, dominated by chocolate-covered marzipan and sweet spice.
Mouthfeel. Very full-bodied and chewy with a heavy, viscous, and syrupy texture. Carbonation is low, enhancing the creamy, coating sensation provided by the lactose and roasted corn flakes. A smooth, noticeable alcohol warmth is present but well-integrated, avoiding any harshness.
