This golden Saison, a collaboration with Zapiain, offers a complex sensory journey shaped by a co-pitch of Saison yeast and Brettanomyces Bruxellensis. English Pale malt, Munich malt, and wheat provide a rustic, medium-bodied foundation. The aroma is a sophisticated blend of spicy phenols and funky, earthy notes, complemented by the floral touch of Perle and the citrusy, tropical edges of Simcoe hops. On the palate, a pleasant, light acidity weaves through grainy malt flavors, leading to a bone-dry, effervescent finish. Its natural carbonation enhances the vibrant, fruity character and rustic depth of this evolving mixed-fermentation ale.
Appearance. Deep golden color (approx. 7 SRM) with a dense, rocky, long-lasting ivory head that leaves persistent lacing. Slight haze is visible as the beer is unfiltered.
Aroma. High aromatic intensity. A complex mix of peppery spice and rustic, earthy funk from the Brettanomyces. Moderate fruity esters suggesting pear and citrus are supported by floral Perle hops and a resinous, tropical hint of Simcoe. Low grainy-sweet malt character.
Taste. Initial impression is a refreshing, light lactic tartness. The malt profile is soft and grainy, showcasing the bready depth of English Pale and Munich malts. Hop flavor is moderate, echoing the spicy and citrusy notes from the aroma. Bitterness is firm but balanced. The finish is remarkably dry and lingering, with a spicy, rustic aftertaste.
Mouthfeel. Medium body with high, effervescent carbonation from bottle conditioning. A noticeable but well-integrated alcohol warmth is present due to the higher ABV. Low astringency and a crisp, clean mouthfeel.
