A quintessential Doppelbock from the Holy Mountain, this lager presents a deep copper hue with fiery red highlights. The sensory journey begins with an inviting aroma of soft roasted accents, caramel, and a delicate thread of dried fruit. On the palate, a velvety, medium-full body carries rich layers of caramelized malt, integrating subtle cocoa and dark chocolate notes. While the initial impression is one of malty sweetness, it is expertly balanced by a light, noble bitterness that leads to a clean, lingering finish of quality plain chocolate. This is a robust and harmonious beer, embodying centuries of Benedictine brewing tradition with every sip.
Appearance. Dark copper to deep mahogany with brilliant clarity and fiery red highlights; topped with a dense, fine-pored, tan head with excellent persistence and lacing.
Aroma. Moderate to high intensity; dominated by rich, bready, and deeply toasted malt. Distinct notes of caramel and dried fruits like prunes or dark grapes are present, complemented by soft roasted cocoa accents. Hop aroma is virtually absent, and the fermentation profile is exceptionally clean.
Taste. Richly malty with an initial impression of caramelized sweetness. Deep flavors of toasted bread and Maillard products are layered with dark chocolate and roasted cocoa. The hop bitterness is moderate-low, providing just enough balance to prevent cloying. The finish is smooth and long, featuring a lingering character of high-quality dark chocolate without any burnt or harsh roasted notes.
