This Wild Specialty Beer offers a vibrant sensory experience reminiscent of a raspberry sorbet. The aroma is dominated by an explosion of fresh raspberries, underpinned by a clean, lactic tang from Lactobacillus plantarum and Lactobacillus bulgaricus. On the palate, the assertive tartness of the real fruit is softened by the silky addition of lactose and the aromatic warmth of vanilla. Distinctive earthy, lemony notes from sumac provide a sophisticated counterpoint to the berry sweetness. It finishes with a rich, ice cream-like texture and a lingering, bright fruit acidity that is both refreshing and complex, expertly balancing dessert-like qualities with wild fermentation character.

Appearance. Vibrant ruby-red to deep pink (SRM 15-20 from fruit); hazy to opaque; moderate pink-tinted head with fair retention and slight lacing.

Aroma. High intensity fresh raspberry; clean lactic sourness; subtle notes of marshmallow-like vanilla and a light, peppery, citrus-like spice from sumac; no hop aroma; very low malt presence.

Taste. Immediate, sharp raspberry tartness followed by a creamy mid-palate from lactose; subtle vanilla sweetness; earthy, tangy sumac adds complexity; negligible bitterness; clean, acidic finish with a lingering fruit-skin character and no harshness.

Mouthfeel. Medium-full body enhanced by lactose; moderate carbonation; creamy, coating texture; light alcohol warmth; slight astringency from fruit tannins.
