This spontaneously fermented Danish cider captures the essence of summer through a bone-dry profile of organic Topaz apples. The addition of Simcoe hops during the dry-hopping process imparts a vibrant sensory layer of grapefruit peel and passion fruit, harmonizing with the natural tartness of the fruit. Expect a wild, earthy character derived from spontaneous fermentation that elevates the crisp apple base. Appearance. Pale straw color (SRM 2-3) with brilliant clarity and a lively, fast-rising carbonation. A thin white head forms briefly before receding to a fine rim with minimal lacing.
