Abbaye D’Aulne Brune

Belgian Dubbel 6 º 14 IBU
This British Brown Ale presents a rich, abbey-inspired profile, characterized by deep caramelized malts and a distinctive honeyed sweetness. The influence of bottle conditioning introduces markedly spicy nuances that dance alongside malted, toasted notes and a subtle hint of walnut. While the hops remain discreetly in the background, they provide just enough structure to balance the graceful malt body. The interplay between the beer’s malt-forward character and its pleasant bitter-sweet finish creates a sophisticated sensory experience, where toffee and light chocolate tones are elevated by yeast-driven complexity and a medium, well-carbonated mouthfeel that reflects its second fermentation in the bottle.
Appearance. Dark reddish-brown in color with good clarity. It supports a moderate, light tan head with fair retention and light lacing.
Aroma. Moderate intensity with a sweet malt profile featuring prominent caramel, toffee, and a distinct hint of walnut. Markedly spicy yeast-derived notes are evident, supported by very light earthy hop character and a faint toasty background.
Taste. Initial impression of honeyed sweetness followed by moderate caramel and toasted malt flavors. Subtle light chocolate and biscuity notes add complexity. Bitterness is medium-low, keeping the balance malt-focused. The finish is pleasant and bitter-sweet with lingering spicy notes and a clean, toasted aftertaste.
Mouthfeel. Medium body with medium-high carbonation. It exhibits a very light, well-integrated alcohol warmth and a smooth, slightly creamy texture without astringency.
