3 Fonteinen es una cervecería belga situada en Beersel, cerca de Bruselas en la conocida como “Zona Lambic”. Todo empezó cuando Gastón Debelder y su esposa Raymonde Dedoncker, progenitores de Armand, actual alma mater de la cervecería, se instalaron en Beersel. Ahí se hicieron cargo de una tasca en la que históricamente se mezclaban lámbicas.

El negocio lo heredaron sus dos hijos, Guido se hizo cargo del restaurante y Armand de la cervecería. Aunque empezaron como blenders en 1999 sacaron su primera lambic realizada de manera íntegra en sus instalaciones. Un accidente tecnológico dio al traste con el crecimiento y consolidación de la cervecería en el 2009. Se perdió gran parte de la producción en botella pero Armand, con una idea de genio, supo sacar provecho a parte de lambic recalentada haciendo un destilado con el nombre de Armand’s Spirit. Gracias a eso pudo reflotar la empresa y volver a poner a 3 Fonteinen en el top del reconocimiento internacional.

Oude Kriek se elabora macerando una lambic joven con guindas (1kg/l) agrias recogidas a mano durante 4 meses. La lambic afrutada resultante se mezcla con otras lambics jóvenes en una proporción del 35%. Lo que hace a esta cerveza merecer el apellido de Oude es que las botellas se almacenan en bodega durante un mínimo de 5 meses. El resultado es una agradable mezcla entre las notas vibrantes de la fruta, notas de frutos secos como la almendra y la acidez marca de la casa.

These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley.

Wie bei den meisten Produkten hängt auch die Qualität von Bier von der Güte der einzelnen Rohstoffe ab. Kaum jemand nimmt diesen Fakt so ernst, wie die Brouwerij 3 Fonteinen aus Belgien. Die Brauerei arbeitet mit einer ganzen Reihe landwirtschaftlicher Betriebe aus der Region zusammen und hat zur Beschaffung exzellenter Braugetreide sogar das Pajot Cereal Collective ins Leben gerufen. Kein Wunder also, dass auch etwa die Hälfte des verwendeten Hopfens aus den Hopfengärten Belgiens stammt und die Sauerkirschen für das Oude Kriek auf belgischem Boden wuchsen. Für das Kirschbier wurden so viele der tiefroten Früchtchen verwendet, dass am Ende etwa 350 Gramm Kirschen auf einen Liter Gerstensaft kommen.

Die Kirschen schmeckt man nicht nur, man sieht und riecht sie auch: Das rubinrote Bier mit zartrosa Schaum duftet intensiv nach vollreifen, saftigen Kirschen, die sich in der Nase mit Anklängen von Zitrone und Eichenholz vereinen. Der Antrunk ist trocken wie ein edler Rotwein und weist die gleichen würzigen Noten von erdigem Holz, dunklen Trauben und Leder auf. Das Aromenspiel wird von vollmundigen Sauerkirschen, floralem Hopfen, funky Hefe und hellem Malz vervollständigt. Eine fruchtige Säure untermalt das bierige Vergnügen und formt ein saures Finish, das Kirsch- und Zitrusnoten auf die Zunge zaubert und Lust auf eine weitere Flasche weckt.

Birra di colore rosso intenso, bollicine molto fini e schiuma di colore rosa. Il gusto è inizialmente acido e lascia pian piano spazio al gusto fruttato dato dall'enorme quantità di ciliegie utilizzate in fase di maturazione. Corpo medio e finale molto secco, leggermente astringente. Una Oude Kriek "coi fiocchi".

Temporada 2019-2020 Ensamblaje nº 46. Embotellado el 20/02/2020. "Este Oude Kriek se caracteriza por una larga maceración de seis meses y medio en barricas de roble. Si bien la mayoría de las cerezas ácidas se maceraron en roble tostado, se decidió mezclarlas con un Oude Kriek en lugar de un Robijn (rubí), ya que se considera que las características de las tostadas son más sutiles. Se han utilizado cinco lámbicas diferentes de siete cervezas diferentes. Se deja que este Oude Kriek, con una intensidad de fruta del 32%, se asiente durante más de un año antes de lanzarlo. De esta manera, la edad promedio ponderada de esta botella es de más de 30 meses cuando se libera".
