Appearance. Deep golden to amber-gold (5–7 SRM). Completely still with no head or lacing due to lack of carbonation. Clarity is generally clear to brilliant, showing a slight aged depth.
Aroma. Moderate to high intensity. Dominated by complex wild funk, including damp hay, barnyard, and horse blanket. Bright lactic acidity provides notes of sharp lemon and rhubarb. Low malt presence of grainy wheat and honey. No hop aroma; neutral oak barrel character and aged hops contribute a faint earthy woodiness.
Taste. Sharp, clean lactic sourness defines the initial impression, followed by layers of sour apple, citrus rind, and dried apricot. Low bready wheat malt provides a subtle backbone.
