Built upon the La Collina base, the addition of lemon sharply defines the citrus esters, while lavender contributes a nuanced, perfume-like floral complexity that weaves through the spicy pepper notes of the yeast. The foeder maturation provides a subtle structural depth and a hint of earthy oak. Effervescent and highly attenuated, the palate is exceptionally dry, highlighting grainy malts before finishing with a clean, botanical snap. Appearance. Pale gold with a slight orange hue (approx. 6 SRM). It is slightly hazy due to being unfiltered and foeder-aged, topped with a dense, rocky, long-lasting white head that leaves significant lacing. Highly effervescent.
