Inspirada en la herencia de los monjes belgas. Elaborada utilizando levadura que sigue trabajando en botella. Recomendamos esperar un mes después de que se haya embotellada antes de probarla. Mantenga en un lugar oscuro y fresco y usar una copa de gran abertura (en forma de tulipa).

BIIR / Edge Brewing Triple Virgin Cherries

We jumped at the chance to do a collaboration with our Belgian brewmaster friend Gunther Bensch, from BIIR. This one combines our fruity sense of humor with his fruit beer-brewing know-how.

Late Spring brings the first of the seasonal crop of cherries to Barcelona. So we heaped kilos of this seductive fruit into a strong Belgian beer. The result is a gorgeous balance of sweet and sour cherries.

Ms. Violet 2018 Edition

Ms. Violet is our homage to the Belgian tripel style of brewing, and to the people who make the best beers in the world with just single ingredients and the best yeast possible. We again used our house pear tree Brett, alongside plums and blackcurrant to create a fun mix of warm alcohol and fruit notes which round off to a dry, short finish, albeit with intense plum notes throughout. In this beer we pushed the boundaries of fermentation possibilities with a Brett yeast, and used close to a tonne of fruits per thousand liters, hence the beautiful hazy purple body!
