Chimay è un birrificio trappista con sede nell’omonima località della Vallonia, dove sorge l’Abbazia di Notre-Dame de Scourmont, edificata nel 1850 da alcuni monaci dell’Abbazia di Westvleteren, guidati dall’abate Jordain.
Le birre di Chimay sono stata tre la prime ad avere ricevuto il marchio ATP come Authentic Trappist Product e il birrificio è diventato uno dei due produttori trappisti più grandi del Belgio e nel mondo. Il monastero si impegna nella produzione di formaggi e di birre che garantiscono la sussistenza dei monaci, che interrompono la produzione in concomitanza con le due guerre del novecento.
Il secondo dopo guerra coincide con l’introduzione di nuove tecniche, l’ampliamento dell’impianto e l’isolamento del famoso lievito di Chimay, che caratterizza le cinque leggendarie birre prodotte dal birrificio trappista. Chimay rimane tuttora il marchio trappista più famoso e diffuso nel mondo.

Bia có màu vàng sáng, đục, bọt bia rất mịn. Mùi hương của Chimay trắng pha trộn hài hòa đặc trưng của hoa bia tươi và nấm men. Bia Chimay trắng có sự cân bằng giữa 2 vị ngọt và hơi đắng nên bạn sẽ cảm nhận được men đắng của bia tan chảy trong miệng một cách êm dịu.
Uống bia Chimay trắng phải thật chậm, cảm nhận từng dòng chảy qua môi, yết hầu rồi lan tỏa tới tới trái tim của người yêu bia. Bia được phục vụ bằng loại ly riêng chỉ dùng cho Chimay với cổ ly rộng như cái tô để người uống có thể cảm nhận hương thơm của mạch nha, trái cây, yến mạch khi lên men. Một ly bia đúng kiểu phải được rót thật chậm để bọt dâng cao hơn miệng ly khoảng 0,75mm.
Thưởng thức bia Chimay trắng đầu tiên phải dùng mũi để cảm nhận mùi hương như trái cây vừa chín tới, sau đó đưa từng ngụm Chimay vào miệng, từ từ đón nhận sự xâm nhập từng đợt sóng bia trải đều khắp bề mặt lưỡi- một sự tấn công nhẹ nhàng mà nồng nàn khiến người đón nhận ngây ngất với men say đầy mê hoặc.
