Cantillon – Grand Cru Bruocsella es una lambic de añada, lo que significa que todas las cervezas de su blend proceden de la misma temporada. En este caso, permanecen tres años en las barricas. El resultado es una cerveza de poca carbonatación con un sabor complejo, ligeramente oxidado en la que se conjugan la parte vínica ligeramente ácida con los matices tostados de la madera.

Dette er en øl med en meget kompleks struktur, der har en vinagtig og noget oxideret smag, de let syrlige strukturer blander sig med mere bløde aspekter. Kraftig, men elegant, Bruocsella kan betragtes som det manglende led mellem vin- og ølverdenen.
Da der ikke er nogen sekundær gæring i flasken, er Bruocsella en flad, ikke-mousserende øl.
Øllen bør opbevares og serveres ved en temperatur på 12-15 grader og kan gemmes i op til 20 år.

Na drie jaar rijping op eikenhouten vaten wordt deze lambiek zorgvuldig geselecteerd op zijn uitzonderlijke kleur, aroma en smaak. Het resultaat is een elegant bier met een licht ambergouden kleur en een verleidelijk aroma van appel en honing.
De smaak wordt gekenmerkt door zijn droge karakter en een subtiele, verfijnde zuurgraad. Bij langere rijping ontwikkelt het bouquet tonen van geroosterd brood, waardoor het door sommigen vergeleken wordt met een witte Bourgogne, zoals Chardonnay. Door zijn complexiteit en zachte structuur doet Grand Cru Bruocsella haast meer denken aan een wijn dan aan een bier.
De spontane gisting — zonder toevoeging van gist en volledig gedragen door micro-organismen uit de omgeving — maakt dit bier uniek in de wereld. Ongefilterd en zonder toevoegingen gebotteld, blijft het zich in de fles verder ontwikkelen en transformeren.
