La peculiarità del Lambic risiede nel processo fermentativo: anziché inoculare artificialmente lieviti selezionati, i mastri birrai lasciano raffreddare il mosto di birra in grandi vasche aperte – tradizionalmente poste nei sottotetti del birrificio, ambienti ventilati ed esposti alla specifico ecosistema microbico locale. Il mosto viene dunque “infettato” da tutta una serie di microrganismi naturali (lieviti selvaggi e batteri) che innescano una fermentazione spontanea, che proseguirà poi per mesi (o anche lunghi anni) in botti di rovere secondo dinamiche non direttamente controllabili dal birraio.
La Grand Cru Bruocsella Lambic Bio 2017-2018 è un pregiato e raro Lambic millesimato, imbottigliato senza subire blend dopo una maturazione in barrique di tre anni. Di colore aranciato carico e con effervescenza quasi del tutto assente, regala una bevuta complessa e una struttura organolettica estremamente variegata e profonda: le note vinose e la leggera ossidazione accompagnano sentori selvaggi (cuoio, sella di cavallo, bosso, aia) e di cantina (muffa, legno umido) innestati su una vena acidula pungente e altrettanto intensa, dalle spigolosità acetiche e lattiche. Un’esperienza gustativa imperdibili per i veri amanti del genere.

Grand Cru Bruocsella può essere considerato l'anello mancate tra la birra ed il vino. Si tratta di una birra complessa, una miscela di Lambic invecchiati per tre anni in botti di rovere, che non subiscono la fermentazione secondaria in bottiglia, infatti Grand Cru Bruocsella è caratterizzata da una carbonatazione quasi assente. Dal colore dorato con riflessi ambrati è intensa e pungente, si percepiscono seducenti ed aciduli sentori fruttati (mela) e lievi sfumature di miele. Vinosa acidula ed elegante si presta agli abbinamenti culinari più raffinati.
