In order to preserve the subtlety of the hops, the lambics selected for Cuvée Saint-Gilloise are elegant and refined such that the balance between acidity and bitterness is not disturbed. Since there is no blending with young lambic as for gueuze, and no addition of fructose as for fruit beers, secondary fermentation of Cuvée Saint-Gilloise in the bottle is brought about by adding liquid sucrose. Like all the beers produced at Cantillon Brewery Cuvée Saint-Gilloise will keep for a very long time in a good cellar, but also like all hopped beers it is best drunk when young so as to be able to fully enjoy the floral aspect of the hops.

In 2004 vroeg de clubleiding ons een speciaal bier te creëren ter herdenking van de 100ste verjaardag van het winnen van het eerste Belgische kampioenschap van de club. Cuvée 1904 werd naar behoren gecreëerd en werd gevolgd door Cuvée des Champions om de status van de club te vieren toen deze tijdens de kampioenschappen van 2004/2005 promoveerde naar de tweede divisie. Omdat de club sindsdien niet altijd als een kampioen presteert, werd besloten om voor de derde en laatste keer de naam te veranderen in Cuvée Saint-Gilloise.

Cantillon Cuvée Saint-Gilloise (ex Cuvée des Champions) è un lambic a fermentazione spontanea ottenuto da lambic di due anni maturati in rovere e quindi dry-hoppati – in genere con Hallertau Mittelfrüh – prima dell’imbottigliamento, dove la rifermentazione avviene con una piccola aggiunta di sciroppo di zucchero: un metodo che esalta la finezza acida senza ricorrere a blend con lambic giovani. 

Nel calice è dorata opalescente con schiuma fine; al naso sprigiona note floreali ed erbacee del luppolo con richiami di agrumi (pompelmo, lime), legno e “cantina”. Al palato è secca, di acidità vivace e carbonazione brillante, bilanciata da un amaro elegante e pulito che allunga il sorso in un finale asciutto e rinfrescante. Nata come omaggio alla Royale Union Saint-Gilloise di Bruxelles, da cui riprende nome e colori in etichetta.

Mot de Cantillon : "Afin de préserver la délicatesse du houblon, les lambics choisis pour l’élaboration de la Cuvée Saint-Gilloise sont élégants et tout en finesse afin de préserver l’équilibre acidité/amertume. Vu qu’il n’y a pas d’assemblage avec du jeune Lambic comme pour la Gueuze et pas d’apport de fructose comme pour les bières à fruits, la seconde fermentation en bouteille de la Cuvée Saint-Gilloise est due à un apport de saccharose liquide. Comme toutes les bières de la brasserie Cantillon, la Cuvée Saint-Gilloise est une bière de très longue conservation, mais comme toutes les bières houblonnées, il est conseillé de la boire jeune pour retrouver le côte floral du houblon."

In 2004 vroeg de clubleiding ons een speciaal bier te creëren ter herdenking van de 100ste verjaardag van het winnen van het eerste Belgische kampioenschap van de club. Cuvée 1904 werd naar behoren gecreëerd en werd gevolgd door Cuvée des Champions om de status van de club te vieren toen deze tijdens de kampioenschappen van 2004/2005 promoveerde naar de tweede divisie. Omdat de club sindsdien niet altijd als een kampioen presteert, werd besloten om voor de derde en laatste keer de naam te veranderen in Cuvée Saint-Gilloise.

Since there is no blending with young lambic as for gueuze, and no addition of fructose as for fruit beers, secondary fermentation of Cuvée Saint-Gilloise in the bottle is brought about by adding liquid sucrose. Like all the beers produced at Cantillon Brewery Cuvée Saint-Gilloise will keep for a very long time in a good cellar, but also like all hopped beers it is best drunk when young so as to be able to fully enjoy the floral aspect of the hops.

Um die Delikatesse des Hopfens zu bewahren, sind die für die Entwicklung der Cuvée Saint-Gilloise ausgewählten Lambics elegant und sehr fein, um das Gleichgewicht zwischen Säure und Bitterkeit zu bewahren.

Da es keine Mischung mit jungem Lambic wie bei Gueuze und keinen Fructose-Beitrag wie bei Fruchtbieren gibt, ist die zweite Gärung in der Flasche der Cuvée Saint-Gilloise auf einen Beitrag von flüssiger Saccharose zurückzuführen.

Wie alle Biere aus der Cantillon-Brauerei ist das Cuvée Saint-Gilloise ein Bier mit einer sehr langen Haltbarkeit, aber wie alle Hopfenbiere ist es ratsam, es jung zu trinken, um die blumige Seite des Hopfens zu finden.
