Mot de Cantillon : "Afin de préserver la délicatesse du houblon, les lambics choisis pour l’élaboration de la Cuvée Saint-Gilloise sont élégants et tout en finesse afin de préserver l’équilibre acidité/amertume. Vu qu’il n’y a pas d’assemblage avec du jeune Lambic comme pour la Gueuze et pas d’apport de fructose comme pour les bières à fruits, la seconde fermentation en bouteille de la Cuvée Saint-Gilloise est due à un apport de saccharose liquide. Comme toutes les bières de la brasserie Cantillon, la Cuvée Saint-Gilloise est une bière de très longue conservation, mais comme toutes les bières houblonnées, il est conseillé de la boire jeune pour retrouver le côte floral du houblon."

Elegante Balance von Säure und Bitterkeit
Die sorgfältig ausgewählten Lambics sind elegant und raffiniert, wodurch die Subtilität des Hopfens erhalten bleibt. Im Gegensatz zu Gueuze oder fruchtigen Bieren wird hier kein junger Lambic verwendet, und es wird auf die Zugabe von Fruktose verzichtet. Stattdessen erfolgt die zweite Gärung in der Flasche durch die Zugabe von flüssiger Saccharose, was die Reinheit des Geschmacks unterstreicht.
