Wildflower - St Phoebe 2024: Ebony Sun plum Price: $34 The first of two variants for St Phoebe 2024, this release was made with 490kg of fresh, whole, tree ripened Ebony Sun plums from Thornbrook Orchard in Nashdale, NSW. Unlike other Saints, the fruit went straight onto beer rather than going through an initial carbonic maceration... and after 4 months was bottled and allowed to naturally carbonate and mature before release. The results speak for themselves... Tasting notes by Meesh: Perfect pink with a big foamy head, the nose is all jammy plum, bright florals, fruit candy, and vanillin. On the palate, it is generous with sweet fruit, followed by elegantly integrated acid which leaves a clean finish. Perfect park juice!
