In een periode van zes eeuwen wordt de brouwerij tientallen malen geplunderd, getroffen door een aardbeving, de pest en de hunnen en onbeschrijfelijk vaak gesloopt en wederopgebouwd – de huidige gebouwen worden dan ook wel het ‘Marijke Helwegen van Beieren’ genoemd. Maar de monniken laten het hoofd dus niet hangen, zelfs niet als op 23 april 1516 hertog Willem IV van Beieren het Reinheitsgebot afkondigt, nota bene op de stoep van de brouwerij Weihenstephan, waarmee het gebruiken van alle granen behalve gerst verboden wordt om bier mee te brouwen. Het Weissbier wordt tot ver in de negentiende eeuw slechts door een Koninklijke monopolist in Beieren gebrouwen tot de regels versoepeld worden – en dan kan het allerbeste tarwebier ter wereld weer onbezorgd worden genoten!
Van alle illustere brouwerijen ter wereld is Weihenstephan waarschijnlijk dus het meest illuster – zij is de oudste brouwerij ter wereld met wortels in het jaar 1040; zij is verbonden aan de brouwfaculteit van de Universiteit van München en vrijwel elke brouwer in Europa heeft hier gestudeerd; haar gist is zo beroemd dat vele brouwerijen over de wereld deze gebruiken. Daarbij staat elke druppel bier die de brouwerij verlaat onder constante kwaliteitscontrole van de meest serieuze aard – dat kan ook niet anders bij een brouwuniversiteit.
Deze ‘doppelbock’ heeft een alcoholgehalte van 7,4% per volume en karakteriseert zich met een mooi moutig aroma, een rijke neus en een diepdonkerrode kleur. Eigenlijk de standaard voor alle doppelbock bieren!
