Samuel Smith Stingo è la strong ale che viene affinata un intero anno in botti di quercia centenarie le quali vengono periodicamente visionate dai birrai della brewery. La Stingo – nome che nel dialetto dello Yorkshire sostituisce il termine strong – è una birra in simbiosi con il legno che l’ha contenuta, e che le dona caratteristiche uniche. Frutta, uvetta, caramello, biscotto, budino e melassa richiamano alla mente un marsala; note che riemergono in bocca, accompagnate da lievi note acidule e da una chiusura leggermente amarognola Dotata di un corpo medio e di una moderata carbonatura, la Stingo è una birra che scalda e che evolve durante la bevuta.

Le Old Ale sono le tradizionali birre inglesi che maturano a lungo, spesso in botti di legno, e dall’importante grado alcolico. Presentano un equilibrio spostato verso le componenti maltate. Sono simili alle Wood Aged Beer, stile più generico che include birre che hanno la caratteristica di riposare in botti di legno, che abbiano o meno contenuto altre bevande alcoliche.

Samuel Smith’s Old Brewery è un birrificio indipendente inglese, il più antico dello Yorkshire. Fondato nel 1758, viene associato a Samuel Smith, che lo acquistò e lo fece diventare un punto di riferimento dell’economia locale.

La fama del birrificio venne anche omaggiata dalla penna di Charles Dickens, che lo menzionò in suo romanzo. Samuel Smith prosegue la produzione di birra di qualità secondo i canoni della tradizione anglosassone; nel birrificio viene utilizzata la coltura di lievito da oltre due secoli e alcune attrezzature antiche, come le vasche per la fermentazione.
