Often shouldered for its mega tropical hype contemporaries, we love the sheer array of flavour and aroma compounds this US slammer brings to the party; the real secret is to know just how much to use. Featuring 10kg in the whirlpool and 10kg offset against a 30kg Mosaic addition in the dry-hop, You Cannot Be Serious is an IPA with multiple levels of complexity layered throughout. The typical Polly’s tropical notes are there; with mango, tangerine, bubblegum and berries from our old pal Mosaic, but with added levels of pithy lemon and lime, as well as sage, bay leaves and just a whisper of cedar. A modern day riff on a certifiable Polly’s classic; this beer is an absolute banger.
