Product DetailsAs hop pairings come, we’d be pretty hard pressed to look beyond the combination of El Dorado and Simcoe as the quintessential Polly’s pairing. One that extends as far back as our earliest brews here at HQ, we’ve seen this combo go through ebbs and flows depending on its crop year; one variety being a little more or little less potent than its prior crop, but when we opened up the bags of the freshest crop we could get our hands on from our hop merchant we absolutely knew we were back on form. Utilising both hops on both the hot and cold side of the brewing process, we’ve rinsed those wonderful hop oils during the boil to impart a gentle but consistent bitterness as a foundation on Sleep Sound, before an explosion of punchy, bright tropical notes burst with apricot, berry, citrus fruits and jelly tot sweetness to remind you that this is very much a Polly’s beer.
