We’ve been pretty taken in by Strata here at Polly’s HQ. It’s rapidly become every craft brewery’s new favourite hype hop, and we’re fully on board the hype train with this incredible US varietal; the real fun and alchemy part begins now though, as we experiment what combinations work best with this ultra-potent hop. Having a huge affinity for Motueka at the brewery, we felt the bright, punchy tropical notes would play perfectly off the “passionfruit meets pot” notes of Strata. Backed up with a hearty addition of Polly’s classic Simcoe in both the whirlpool and dry-hop stage, expect to find freshly chopped citrus fruits to give this incredible IPA just the right amount of balance.
