This beer was brewed using a variety of malted barley and raw wheat. One variety of hop was added to the kettle during the boil. The wort was transferred to our sour cellar to cool in the coolship overnight to be fermented with wild yeasts and bacteria. The liquid was then aged in puncheons (wooden casks) for 12 months. This is the traditional Lambic method with minimal intervention that perfectly encapsulates the micro forna and flora of the Ellon countryside.

Di medio corpo e con una carbonatazione fine, al palato è croccante con una sapidità vinosa, aspra ed un’acidità tonificante ricca di scorza di limone con qualche tocco di erbe aromatiche. Chiude estremamente secca. “Questa birra è stata prodotta utilizzando una varietà di orzo maltato e grano crudo. Una varietà di luppolo (Bobek) è stata aggiunta al bollitore durante l'ebollizione. Il mosto è stato poi trasferito nella nostra cantina e lasciato raffreddare tutta la notte nel nostro coolship di rame dove lieviti selvaggi e batteri presenti nelle microflore delle campagne di Ellon, hanno provveduto alla fermentazione. Spontaneity #2 è la nostra birra acida a fermentazione spontanea al 100%, prodotta utilizzando solo ingredienti britannici e lievito selvatico della campagna scozzese. La birra trascorre poi oltre 12 mesi ad invecchiare in botti di legno (puncheons) per acquisire un profilo aromatico rotondo, complesso ed intrigante che si ispira ai grandi Lambic belgi”.

Spontaneity #2 starts its journey as a raw wheat and pilsner malt base, which forms the foundations of our wort. We add aged Bobek hops to the kettle during the boil before transferring to our 50HL copper coolship overnight where we capture all the wild yeast and bacteria for spontaneous fermentation. Once cooled, the liquid was transferred to oak puncheons where it’s aged for over 12 months. The result is straw-hued, with aromas of fresh hay and brie rind. On the pallet there’s effervescent sherbet, tannic and vinous notes with hints of citrus that finishes super dry.
