É uma cerveja típica no seu estilo, inicialmente apresenta um sabor doce e intenso, e o amargor surge depois para nos oferecer um final equilibrado e suave. A Brouwerij Huyghe foi fundada em 1906 por Leon Huyghe, em Melle, Bélgica. Faz parte do grupo restrito de cervejeiras ainda sob gestão familiar e produz várias cervejas de exceção, desde logo a Delirium com o seu icónico elefante cor-de-rosa que a ajudou a tornar uma das marcas mais famosas do mundo, da qual se destaca a Delirium Tremens, considerada por várias vezes “A melhor cerveja do mundo”! Aliás a Delirium é tão onipresente que as pessoas pensam que é o nome da cervejaria e não da cerveja. Os cervejeiros da Huyghe produzem várias cervejas fáceis de beber e plenas de sabor, sejam as cervejas Floris à base de frutas, a Abbey blond Averbode ou as cervejas Mongozo sem glúten. A La Guillotine foi produzida ela primeira vez em 1989 para comemorar os 200 anos da Revolução Francesa, o sucesso foi tanto que a Huyghe – que produz a famosa Delirium – decidiu incluir esta cerveja na sua oferta permanente.
