Our friend Yvan de Baets of Brasserie De la Senne first introduced us to the practice of Bière de Coupage. While it historically took many forms, we were inspired by the practice of "cutting" aged beer with young beer. In this case, we "cut" or blended Jester King SPON with young farmhouse ale. Unfiltered, unpasteurized, and 100% naturally conditioned.
