Holy Goat Brewing Spectral Eclipse

Spectral Eclipse, Sour IPA lasciata fermentare per tre mesi su Brettanomyceti e successivamente luppolata con Galaxy ed Eclipse in dry hopping che regalano un profilo intensamente fruttate con note di mandarino, frutto della passione, pesca e albicocca che ingentiliscono l'acidità di base di questa birra.

Primary fermented with our most tropical Brettanomyces strains for 3 months, and then dry hopped with Australian Galaxy and Eclipse hops. These hops lend a plethora of fruity aromatics, especially mandarin, passionfruit, peach, apricot and a touch of pine as well softening the acidity of our house culture, turning this beer into a massive juice bomb.   

This beer is a collaboration with our friends at  BarthHaas X utilising their Spectrum dry hop liquid. This 100% natural hop derived product allowed us to conduct blending trials to dial in hop variety and quantity to best complement the mixed culture base beer. The final blend provided the perfect complement to our house culture.
