Específicamente, amarillo aporta notas en el aroma a naranja y pomelo complementados por rayadura de lima y notas florales del ekuanot. Mosaic le da su famosa nota a mango, en este caso un poco mas a piel de mango verde y le da unas notas resinosas. Las notas aromáticas siguen al sabor y su leve dulzor residual la convierte en una espesa fiesta de sabores que termina seca y con un amargor agradable que queda en boca recordándonos las IPAS con las que arrancamos el descubrimiento muchos años atras

Left, The West Coast version is brewed with a stripped back malt base, higher bitterness, drier finish and a west coast water profile. The contrast is immediately evident on the nose as all of the sharper, more angular aromas are to the fore. In place of an abundance of tropical fruit, citrus and pine dominant. More specifically, Amarillo throws out deep orange and grapefruit notes on the nose complimented by lime zest and floral notes from Ekuanot. Mosaic displays it mango character in this iteration more like bitter green mango skin and gives some serious dank, resinous notes. The aromatic notes follow through to the flavour and with the slight residual sweetness that is left in the beer create a sticky, dank, zesty party in the mouth which finishes dry and leaves a satisfying bitterness that coats the mouth reminding us of the beers that we all began drinking on this voyage into IPA discovery many years ago.
