Ezeket a söröket virágos, gyümölcsös, citrusos, fenyőszerű vagy gyantás komlók karaktere jellemzi, az IPA sörstílus a komló ízéről, aromájáról és keserűségéről szól.
Az India Pale Ale (IPA) az újhullámos kisüzemi sörfőzés legmeghatározóbb stílusa, eredete egészen az indiai angol gyarmatosításig nyúl vissza. A kereskedők úgy szerették volna optimalizálni a hosszú és drága hajóutat, hogy erősebb és több komló felhasználásával készült, így keserűbb, testesebb, ízesebb, ráadásul tartósabb söröket főznek, majd ezeket helyben, már felvizezett formában kínálják. Ezt gyakran az állomásozó katonák nem várták meg és csapra verték a jóval kedvesebb főzeteket. Ez a történet szolgált alapul az amerikai kisüzemi sörforradalom elindulásához nagyjából az 1980-as években, ekkor kezdtek a főzdék hasonló stílusban, rendkívül izgalmas komlóhangsúlyos, ezáltal illatos és keserű söröket főzni.

Nos juntamos con el maestro en lúpulo de Barth Haas, Benedikt Matsche, para hacer una West Coast cargada con sus mejores productos.
En la parte caliente estamos amargando con Flex, un extracto amargo de lúpulo líquido para reducir lamateria vegetal en la cocción, lo que permite añadir más lúpulo en el whirlpool y mantener la materia vegetal al mínimo. El Whirlpool está lupulado con Centennial Incognito, otro producto de lúpulo líquido que contiene todos los aceites y ácidos de los lúpulos pero con mayor solubilidad para un mayor impacto aromático.
El primer dry hop es una dosis líquida de Citra Spectrum el día de la elaboración.
A mitad de la fermentación se añaden más Citra y Mosaic Spectrum.
Por último, después de la fermentación, se añade una gran dosis de El Dorado y lúpulos de HBC 586 BBC para obtener algo de melocotón y caramelo.
Pero no te dejes engañar por la selección de lúpulos de la nueva escuela.
Esta tiene todo el amargor y la resina que una West Coast IPA debería tener.

We’ve teamed up with Barth Haas hophead extraordinaire Benedikt Matsche for a West Coast IPA that is loaded with the finest hop products form Barth Haas. On the hot side we are bittering with Flex, a liquid hop bittering extract for less plant matter in the boil allowing for more hops to be added in the whirlpool and keeping plant matter to a minimum. Whirlpool hopped with Centennial Incognito, another liquid hop product that contains all of the oils and acids of pellets but with increased solubility for more aroma impact. The first dry hop is a liquid dose of Citra Spectrum on brewday. This is followed up mid fermentation with more Citra and Mosiac Spectrum. Finally post fermentation sees a heavy dose of El Dorado and HBC 586 BBC pellets for some peach and gobstopper. But don’t be fooled by the list of newer school hops. This is has all of the bitter and resin that a west coast ipa should have!
