Aunque inicialmente la elaboración de cerveza era un hobby para Davy Spiessens y Glenn Castelein, en 2004 deciden abrir su propia fábrica en Ingelmunster, pero poco tiempo después, en 2007, se trasladan a Heule. En 2010 Marc De Keukeleire se une al equipo y en 2011 vuelven a mudarse a Moen, donde continuan en la actualidad y donde tienen el espacio necesario para alojar una maquinaria más grande y las numerosas barricas de que disponen.
Esta microcervecera belga, también alojada en el oeste de Flandes como De Dolle y De Struise, es reconocida por utilizar una variedad de levadura propia a la que llaman Morpheus (la cual da nombre a algunas de sus cervezas y se puede ver en algunas etiquetas) y también por su buena mano con las Sour ale y las cervezas envejecidas en barrica.
