This brilliantly clear Kölsch displays a delicate straw hue under a snowy white head. Hallertau hops contribute a soft, spicy, and floral noble character that harmonizes with a faint, fruity ester profile—reminiscent of apple and pear—born from its pure culture yeast. The palate is clean and well-attenuated, featuring a mild but noticeable bitterness that leads to a crisp, dry finish. It is a soft, balanced, and remarkably fresh example of the traditional Cologne-Ale style.
Appearance. Straw to light gold (3.5–5 SRM). Brilliant clarity with a delicate, fine-textured white head that shows moderate persistence and light lacing.
Aroma. Moderate-low intensity with a clean, grainy-sweet malt profile. Subtle, noble Hallertau hop notes offer floral and spicy accents. Faint fruity esters of green apple and pear are present from the cool ale fermentation. Extremely clean with no diacetyl or sulfur.
Taste. Initial impression of soft, grainy-sweet maltiness followed by a mild but noticeable noble hop bitterness. Delicate flavors of cracker and light bread lead into floral and herbal hop character. The balance is slightly toward the malt initially but dries out quickly. The finish is crisp, clean, and dry without being harsh or astringent.
