This Belgian-inspired Specialty IPA showcases a vibrant synthesis of traditional farmhouse character and modern West Coast hopping. A clean but expressive Saison yeast strain provides a spicy, peppery foundation that elevates the explosive aromatic profile of Strata, Citra, and Columbus hops. Expect a punchy bouquet of passion fruit, grapefruit zest, and dank resin. The palate is defined by a firm, clean bitterness and a remarkably dry finish, typical of the style, allowing the tropical fruit notes to linger. Its medium-light body and brisk carbonation ensure high drinkability despite the significant hop saturation and subtle alcohol presence of the style.
Appearance. Deep gold to light amber in color. Features a persistent, rocky white head with excellent lacing and moderate to high clarity, though a slight haze from hop oils is acceptable.
Aroma. High intensity hop aroma featuring passion fruit and mango from Strata and Citra, backed by Columbus-driven resin and dank earthiness. Moderate spicy phenols and citrusy esters from the Saison yeast add a complex, peppery layer.
Taste. Initial impression of citrus peel and tropical fruit. Hop flavor is high, mirroring the aroma with resinous and fruity notes. Bitterness is firm and assertive but not harsh. The fermentation character adds black pepper and light clove notes. The finish is remarkably dry and clean with a lingering bitterness.
