Zombination V M.A.N.O.L.O. is a monumental Imperial Stout that showcases the mastery of Flanders’ brewing traditions combined with extensive barrel aging. At a formidable 17% ABV, this massive stout delivers an intense sensory experience defined by its time in Maker's Mark Bourbon barrels. The profile is dominated by layers of dark chocolate, espresso, and charred oak, interwoven with rich notes of vanilla and spicy bourbon. Deep fruit esters of dried figs and raisins emerge alongside a distinct leathery complexity. The result is a viscous, harmonious masterpiece where the aggressive roast and wood tannins perfectly counterbalance the profound malt sweetness.
Appearance. Jet black and completely opaque (SRM 40+). It pours with a thin, dark tan head that shows low retention due to high alcohol content, eventually settling into a persistent oily rim with prominent legs.
Aroma. High intensity and deeply complex. Pungent aromas of roasted espresso and bittersweet chocolate are layered with Maker's Mark bourbon influence, contributing vanilla, toasted coconut, and charred oak. Esters are pronounced, reminiscent of dried figs, prunes, and raisins, complemented by a smooth yet powerful alcohol presence.
Taste. Initial impression is exceptionally rich and sweet, quickly met by intense flavors of dark cocoa, molasses, and heavy roasted coffee. The mid-palate features significant bourbon character with vanilla and spicy oak tannins. Hop bitterness is firm and necessary to balance the massive malt backbone. The finish is long and lingering, showing dark fruit, wood-derived complexity, and a warming, vinous quality.
Mouthfeel. Full to very full-bodied with a viscous, chewy, and velvety texture. Carbonation is low, enhancing the beer's weight. Significant alcohol warmth is noticeable and provides a soothing, slow-burn heat without being sharp or solventy.
