Pendulum celebrates the vibrant essence of fresh-harvested Nelson Sauvin hops within the structured frame of a Double IPA. The sensory experience is led by a powerful bouquet of Sauvignon Blanc grapes, crushed gooseberries, and passion fruit, typical of this New Zealand variety. Its pale gold appearance supports a complex profile where the hops’ vinous and tropical notes are balanced by a lean, grainy malt backbone. Though potent, the beer remains remarkably drinkable with a clean fermentation profile and a firm bitterness that cuts through the subtle residual sweetness, finishing with a lingering, resinous, and fruit-forward aftertaste that emphasizes its fresh harvest origins.
Appearance. Gold (7 SRM) with a slight, modern haze from heavy dry-hopping. Persistent, off-white, rocky head with excellent retention and fine lacing.
Aroma. High intensity hop aroma dominated by Nelson Sauvin character: white wine, gooseberry, and tropical passion fruit. Low, neutral, crackery malt supports the hops. Clean fermentation profile with no discernible esters or phenols.
Taste. Immediate, intense hop flavors of white grape and melon. A soft, supportive, grainy malt sweetness appears briefly before being overtaken by a moderately high bitterness. The bitterness is firm but smooth, leading into a dry to medium-dry finish. Lingering aftertaste of resinous pine and tropical fruit.
Mouthfeel. Medium body with a smooth, velvety texture. Moderate carbonation provides a crisp edge. Light, well-integrated alcohol warmth is present but restrained, with no harsh hop-derived astringency.
