Zeta Sour Delta is a bold, boundary-pushing Wild Specialty Beer that marries the sharp, clean lactic acidity of Lachancea yeast with the aggressive hopping of a Double IPA. The sensory profile is dominated by a tropical explosion, driven by massive additions of Citra, Cryo Citra, and Cascade lúpulos. Expect vivid layers of succulent mango and ripe papaya supported by a bright, citrusy grapefruit backbone. The fermentation provides a crisp, refreshing tartness that slices through the resinous hop oils, leading to a surprisingly dry and snappy finish. This hybrid creation offers the complexity of a wild ale with the punchy, fruit-forward intensity of a modern hoppy ale.

Appearance. Medium gold to light amber with a persistent, brilliant white head showing extraordinary retention and thick lacing. Displays a significant hazy to opaque appearance, characteristic of a heavily dry-hopped beer.

Aroma. High intensity aromatics featuring a clean, lactic tartness. Dominant tropical fruit notes of mango and papaya are prominent from the Citra and Cryo Citra, complemented by floral and citrusy grapefruit highlights from Cascade. No significant funk or barnyard notes, focusing instead on pure fruit and acidity.

Taste. A sharp, refreshing initial impression of clean lactic acidity. Mid-palate is saturated with hop-derived flavors of mango, tropical juice, and citrus zest. The hop bitterness is firm and well-defined, balancing the sourness without becoming harsh. Malt flavor is low, providing a neutral cracker-like base that stays out of the way of the hop-acid interplay. Finishes dry and crisp with a lingering tropical citrus aftertaste.

Mouthfeel. Medium body with a crisp, slightly mouth-watering acidity. Carbonation is moderate-high, enhancing the refreshing quality. A light alcohol warmth is present but well-integrated, with no significant astringency despite the high hop load.
