This collaboration between Zeta Beer and Sesma Brewing reimagines the Straight Sour Beer through the lens of a classic Spanish leche merengada. Pouring an intense straw yellow, it offers a refreshing profile driven by a wild fermentation that yields organic acids reminiscent of traditional lambic. The aroma is dominated by zesty lemon peel and ripe fruit esters, supported by a clean, pale malt base. On the palate, a crisp lactic acidity balances the citrus brightness, while warm notes of cinnamon stick emerge gracefully in the finish as the glass warms. It is a sharp, cider-like, and highly effervescent innovation.
Appearance. Intense straw yellow (2-3 SRM). Thin white head with very low retention and minimal lacing, typical of the style. Clean and clear appearance.
Aroma. Moderately high intensity. Dominant sharp lactic sourness and bright lemon peel. Ripe fruit esters of peach and apricot provided by the dual-yeast fermentation. Very low spicy cinnamon notes. No hop aroma; clean, crackery malt background.
Taste. Immediate impact of clean, sharp lactic acidity. Abundant lemon citrus flavor interacts with a bready, pale malt backbone. Minimal hop bitterness (low IBU). The finish is dry and refreshing, characterized by a lingering, warm cinnamon spice that becomes more prominent as the beer warms. No hop flavor.
