This Russian Imperial Stout presents a formidable sensory profile defined by its Siberian-inspired intensity. At 9.5% ABV, it radiates a smooth, integrated alcohol warmth that underscores deep layers of charred roasted malts, evoking bittersweet chocolate and espresso. The hallmark of this expression is the authentic infusion of cedar, which contributes complex layers of resinous pine needles, woody nut shells, and a distinct forest-like aromatic depth. This resinous character melds seamlessly with dark fruit esters and a firm bitterness, resulting in a rich, chewy, and harmoniously aggressive profile that remains true to its bold, northern origins.
Appearance. Jet black and opaque (40 SRM). Pours with a dense, persistent dark tan head. High viscosity is apparent through visible legs on the glass.
Aroma. High intensity. Rich aromas of dark chocolate, coffee, and burnt grain are immediately present. The addition of cedar introduces assertive notes of fresh pine resin, woody nut kernels, and a hint of forest floor. Subtle esters of plum and raisin provide background complexity alongside a clean alcohol presence.
Taste. Intense initial impression of bittersweet cocoa and roasted malt. The cedar character is prominent, offering flavors of nutty shells, resinous pine, and a balsamic-like woodiness. Moderate to high bitterness provides balance against a rich malt backbone. The finish is long and warming with lingering notes of char and evergreen.
