Zátara Sandijuela is a vibrant take on the American IPA, leaning into a refreshing sessionable character. It presents an intense copper-gold hue topped with a persistent, frothy head. The aromatic profile is dominated by the crisp, cooling scent of fresh watermelon, harmoniously layered over herbal and citrus hop notes. On the palate, it delivers the thirst-quenching essence of fresh fruit juice, supported by a lean, grainy malt backbone. Appearance. Intense copper-gold color (SRM 9-11). Brilliantly clear with a thick, white, persistent head and moderate lacing.
Aroma. Moderate to high intensity featuring prominent fresh watermelon and melon rind scents. Underlying citrus and herbal hop characteristics are present. Low, clean, bready malt sweetness provides a supportive background with a clean fermentation profile.
Taste. Initial impression is dominated by fresh watermelon juice flavors. Hop flavors of lemon zest and dried herbs follow. Malt character is low and grainy, providing a clean foundation. Bitterness is medium-low, significantly softer than a standard IPA to emphasize drinkability. Finishes dry and refreshing with a short, fruity aftertaste.
Mouthfeel. Medium-light body with a smooth, watery texture. Moderate-high carbonation provides a crisp, effervescent bite. No alcohol warmth or astringency present.
