This single-hop American IPA showcases the unique and pungent personality of the Sorachi Ace hop variety. The sensory profile is defined by a striking aromatic display of bright lemon zest, crushed dill, and a subtle, creamy hint of coconut. A clean, pale malt foundation provides a crisp canvas, allowing the distinctive woody and herbal characteristics of the hop to remain front and center. Firm bitterness cuts through the medium-bodied palate, leading to a bone-dry finish that lingers with a refreshing citrus-herbal snap. Appearance. Medium gold with brilliant clarity. Supports a medium-sized, long-lasting white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent notes of lemongrass, lemon curd, and a distinct herbal character reminiscent of dill. Low levels of coconut and wood-like spice are present, backed by a very low, clean, grainy malt scent and a neutral fermentation profile.
Taste. Initial impression is hop-forward with intense flavors of lemon peel and herbal spice. The bitterness is medium-high and clean, cutting through a light, toasted grain malt backbone. The Sorachi Ace contributes a unique woody and cilantro-like flavor that persists into a very dry, crisp finish with a lingering hoppy aftertaste.
