This Wild Apple Premium Basque Cider is a rustic, bone-dry collaboration between Zapiain and Basqueland. Crafted from 100% native Euskal Sagardoa apple varieties, it offers a sensory journey into traditional Basque sagardoa. The profile is defined by an uncompromising dryness and high acidity, reflecting its unpasteurized and unfiltered nature. Aromas of fermented wild apples and earthy, funky esters dominate, complemented by a sharp, clean palate. Without added CO2, the mouthfeel remains naturally still and slightly tannic, emphasizing the raw, authentic character of the fruit. It is a vibrant, acidic, and complex expression of wild fermentation and regional heritage.
Appearance. Pale straw to deep gold (SRM 3-6); hazy to cloudy due to being unfiltered; no head or lacing as it is a still cider without added carbonation.
Aroma. High intensity; dominant notes of bruised apple, fermented skins, and rustic wild yeast funk; secondary notes of earthy soil, slight leather, and a characteristic touch of volatile acidity (acetic) typical of the Basque style.
Taste. Bone dry initial impression with aggressive, sharp acidity; flavors of tart native apples and lemon zest; zero residual sugar; subtle phenolic bitterness from apple tannins; finish is exceptionally clean, long, and puckeringly dry.
Mouthfeel. Medium-light body; very low to no carbonation (still); noticeable tannin-driven astringency that dries the palate; light, well-integrated alcohol warmth.
