This Brett Beer underwent a year of transformation in wooden barrels, where native microorganisms developed a sophisticated sensory profile. The nose is a complex blend of rustic barnyard funk, wet hay, and stone fruit, underscored by a toasted grain character. On the palate, the unique corn variety offers a delicate cereal sweetness that is rapidly overtaken by a bone-dry, highly attenuated finish. Earthy notes and subtle wood tannins provide depth, resulting in a crisp, farmhouse-inspired experience with a lingering, funky complexity.
Appearance. Deep gold to light amber in color (7-10 SRM). Displays a moderate white head with fair retention and light lacing. Clarity is slightly hazy, a natural result of the native fermentation and extended barrel aging.
Aroma. Moderate to high intensity. Prominent Brettanomyces character features notes of wet hay, barnyard, and earthy leather. This is balanced by stone fruit esters and a rustic, cereal graininess from the milho crioulo. Subtle toasted oak and vanilla nuances from the wood are present.
Taste. Initial rustic grain flavor gives way to a complex array of fermentation-derived traits. Earthy funk and light smoky notes meld with dried apricot and citrus esters. The hop bitterness is low, allowing the high attenuation to create a bone-dry, crisp profile. The finish is long and clean with a lingering hay-like funk and soft wood tannins.
