Expect a dry, highly attenuated profile where soft, grainy malts provide a backdrop for layers of pome fruit and a distinctive, wildflower honey-like nuance derived from the flower’s nectar profile. It finishes crisp and effervescent, showcasing a lively, evolved fermentation character that highlights ZalaZ’s commitment to regional terroir and resilient native flora.
Appearance. Pours a hazy, pale orange to gold (8-10 SRM) with a dense, rocky, long-lasting white head that leaves significant Belgian lace on the glass. Visible effervescence is high.
Aroma. High intensity of fruity esters, specifically pear and lemon zest, alongside a moderate spicy-phenolic character reminiscent of cracked black pepper. A subtle floral honey note from the Assa-Peixe biota blends with low, earthy continental hop notes and a light, grainy malt sweetness.
Taste. Initial impression is exceptionally dry and crisp. Medium-low grainy malt flavors are quickly overtaken by citrusy esters and a persistent spicy, peppery fermentation character. Bitterness is moderate but perceived as firm due to the high attenuation. The finish is very dry with a lingering spicy aftertaste and a faint wildflower nectar complexity.
Mouthfeel. Medium-light body with very high, prickly carbonation that provides a refreshing, effervescent mouthfeel. Alcohol warmth is light and well-integrated. No astringency present.
