This American Stout draws decadent inspiration from the Dutch Stroop Wafel, presenting a rich tapestry of syrupy cinnamon caramel and velvety milk chocolate. The sensory experience opens with an inviting aroma of freshly baked spiced cookies and toasted waffle, supported by a backbone of dark roasted malts. On the palate, layers of sweet caramel and warm cinnamon are balanced by the characteristic roast-driven bitterness of the style. The finish is reminiscent of a chocolate-coated biscuit, offering a dessert-like complexity that remains approachable at a moderate strength. It successfully marries pastry-inspired indulgence with the structure of a classic dark ale.

Appearance. Jet black and opaque (SRM 40). Topped with a thick, persistent, creamy light brown head that leaves significant lacing on the glass.

Aroma. High intensity; dominated by sweet milk chocolate, syrupy caramel, and a distinct dusting of warm cinnamon. Beneath the pastry notes lies a moderate roasted malt character reminiscent of dark cocoa and light-roast coffee, with a subtle doughy, cookie-like malt sweetness. Hop aroma is very low.

Taste. Initial impression is a blend of sweet milk chocolate and toasted grain. The mid-palate reveals rich caramel and spicy cinnamon, evocative of a traditional stroopwafel. Moderate hop bitterness provides enough balance to keep the sweet elements from becoming cloying. The finish is long and sweet, echoing flavors of caramelized sugar and chocolate-dipped biscuits.
