On the nose, sharp apple skin and barnyard aromatics lead into a palate that is bone-dry and refreshingly tart. Appearance. SRM 3-6; Pale gold to deep yellow. Moderate white head with fair retention that settles into a persistent ring; slight haze common for wild cultures.
Aroma. High intensity; dominant aromas of sharp Somerset cider apples and green apple skin. Significant wild character featuring barnyard funk, wet hay, and a light leathery note. Malt is nearly absent, though a faint cracker-like presence may exist.
Taste. Tart and acidic initial impression. Flavors of fresh apple juice and tannic apple skins are prominent. Fermentation character is complex with earthy Brettanomyces funk and a spicy phenolic edge. Hop flavor and bitterness are very low, with the structure provided by fruit tannins and acidity. Finishes bone-dry and crisp with a lingering wild funk.
